Nothing says summer in the south like a classic Tomato Pie - made with homegrown tomatoes and Duke's Mayo. Tomato season is the best season, don't you agree?!

Ingredients
1 frozen, deep-dish pie crust
- 2-4 tomatoes peeled and sliced
- 1 medium onion, chopped
- 1 cup of Duke’s mayonnaise
- 1 ½ cups grated, sharp cheddar cheese
- 1 egg, beaten
- 1 stick of butter, melted
3 small sleeves of butter crackers (like Ritz), crushed
For the Topping
Directions
Bake pie crust about 5 minutes. Peel and slice tomatoes (approximately ¼ inch thick) and make two layers in pie crust. Add salt and pepper, to taste. Sauté onion and spread over tomatoes.
- In a bowl mix mayonnaise, cheese and egg, until well acquainted. Spoon mixture evenly over tomatoes/onions. Push mixture to edges to touch pie crust in order to the seal pie.
- Bake 30 minutes at 325 degrees. Remove and add topping (crackers mixed with melted butter). Then bake an additional 15 minutes.
