Duke's Cheesy Rice Casserole
- 1 lb. loose sausage, mild or hot
- 11/2 cups white rice
- 1 large jar diced pimento
- 8 oz. sharp cubed cheese
- 3/4 cup Duke's Light Mayonnaise
- 1/3 cup skimmed milk
- 1 can cream of mushroom soup
- Cook and drain sausage.
- Steam rice.
- Spray casserole dish with cooking spray.
- In large bowl, mix all ingredients together. Add dash of salt / pepper to taste. Pour in casserole dish.
- Bake at 350°F for 40 minutes.
