Country Ham and Cheese Balls

Ingredients
- 6 oz cream cheese, room temperature and cubed
- 3/4 cup Duke’s Mayonnaise
- 12 oz shredded cheddar (*pro tip-use a good cheddar and box grate yourself!)
- 3 oz Red Clay Carolina Hot Sauce
- 1 tsp Red Clay Charleston Bay seasoning
- 2 oz diced pimento
- 3 oz country ham, diced or cut into thin strips
- Breading station: seasoned flour, egg wash, panko bread crumbs

Preparation
- In a food processor or stand up mixer, buzz/paddle the cream cheese until smooth. Add in Duke’s, Red Clay Charleston Bay, Red Clay Carolina Hot, and buzz to incorporate fully. Fold in shredded cheddar, pimento, and country ham. Chill. Using a portion scoop, make balls and then bread with the flour-egg wash-panko system. Fry at 350 degrees until golden brown. Serve alongside Red Clay Hot Pepper Jelly.
