A minty, yet somewhat spicy chutney, layered between thick slices of juicy tomatoes, a mountain of cheese, and two fluffy slices of bread. If you've ever wanted to celebrate tomato season Bombay-style, here's the perfect way to do it!

Ingredients
1 large firm tomato, sliced
4 slices of your favorite bread, recommend a hearty thick sliced bread
4 Tbsp mint chutney - recipe below
1 cup finely shredded white cheddar
Salt & pepper to taste
Chaat masala to taste, optional

5 Tbsp Duke’s mayo
2 cups fresh mint, packed
1 cup fresh cilantro
2 tsp lemon juice
1/2 to 1 tsp salt
1 tsp sugar
1” piece fresh ginger or 2 grams
1/4 tsp cumin
1 Tbsp water
2 tbsp peanuts
Mint Chutney (Yields 1 Cup)
Directions
Mint Chutney Assembly
Blend everything together until smooth. Adjust salt as needed. If you’d like to make the chutney thicker, add more peanuts and mint
Store in the fridge for a few hours before using.
Sandwich Assembly
Apply 1 Tbsp mint chutney (you can be generous) to each slice of the bread.
Arrange even number of tomato slices on top of two slices of bread.
Sprinkle with salt, pepper, and chaat masala if using.
Divide shredded cheese on each sandwich.
Place the other two slices of bread on top of each sandwich and gently press down. Cut and serve immediately.
