Baked Potato Salad

Ingredients
- 2 pounds red potatoes, cut in half
- 2 Tbsp. apple cider vinegar
- 1/2 cup chopped red onion
- 3/4 cup Duke's Mayonnaise
- 1/4 cup buttermilk
- 1/2 tsp. black pepper
- 1/2 tsp salt
- 1/4 tsp. paprika
Directions
Preparation
- Preheat the oven to 400°F.
- Boil the potatoes in salted water until they are just fork tender.
- Drain the potatoes and return to the pot. Add the remaining ingredients and mix well.
- Lightly smash the potatoes with a potato masher.
- Transfer the mixture to a greased baking dish.
- Bake for 20 minutes.
