Ingredients
- 11/2 Tbsp. white miso
- 2 Tbsp. seasoned rice vinegar
- 1/2 cup Duke’s Mayonnaise
- 1/2 tsp. soy sauce
Salt and pepper to taste
- 1 (7 oz.) bag baby arugula
- 1 (12 oz.) bag frozen shelled edamame, thawed
- 11/2 cups frozen peas, thawed
3 ripe avocados, halved, peeled and chopped

Directions
Dressing
- Combine miso and rice vinegar in a bowl, stir until well blended.
- Add mayonnaise, soy sauce, salt and pepper, mix to combine.
- Cover and refrigerate until use.
Salad
- Mix arugula, edamame and peas in a large bowl.
- Add dressing, gently toss to coat.
- Add avocado and toss again. Serve immediately.
