Aachar is a spicy pickled condiment, eaten with most every meal in India. We're taking that glorious tangy condiment and marrying it to one of the South's most beloved spreads. The perfect blend of East meets West in this Pimento Cheese Sandwich.

Ingredients
4 slices of your favorite bread, recommend a hearty bread
Few slices each of sliced cucumber, rings of red onion, and tomato
4 to 6 lettuce leaves
1 cup (roughly) aachari pimento cheese
Salt & pepper to taste
Chaat masala to taste, optional

1⁄2 cup Duke's Mayonnaise
2 oz diced pimentos
1 cup shredded sharp white cheddar
1 cup shredded mild yellow cheddar
Salt & pepper to taste
2 Tbsp mango aachar (Indian pickle)
1⁄2 tsp chaat masala
1⁄4 tsp Red chili powder
1/8th tsp ground turmeric - optional
Aachari pimento cheese (Yields 2 to 2.5 cups)
Directions
Achaari Pimento Cheese Recipe
Combine mayonnaise, salt, pepper, mango pickle, chaat masala, red chili powder, turmeric in a food processor, grind until pickle is fully incorporated in the mayonnaise.
Indian mango pickle can be found in most grocery stores.
In a bowl, add the mayo mixture, cheese, and pimentos.
Combine with a spatula, mix evenly.
Refrigerate for 1⁄2 hour.
Sandwich Assembly
Onto two slices of bread, spread 1/2 cup of aachari pimento cheese each.
*Pre-toast the slices of bread with mayo (try it instead of butter, trust me) in a pan for a toasted pimento cheese sandwich.
Arrange cucumbers, tomatoes, onions, and lettuce leaves.
Sprinkle generously with salt, pepper, and chaat masala if using.
Place the other two slices of bread on top of each sandwich. Gently press it down. Cut and serve immediately.
