Ingredients
- 1/4 cup Duke’s Mayonnaise
- 1/4 tsp. cumin
- Juice of 1 lime
Salt and black pepper to taste
- 5 cups roasted corn
- 1/3 cup chopped cilantro
- 1/3 cup chopped Italian parsley
- 1/4 cup finely diced red onion
- Lime wedges for serving

Dressing
- Mix mayonnaise, cumin and lime juice together in a small bowl. Add salt and pepper, if desired.
- Cover and refrigerate until use.
Corn Salad
- Combine corn, cilantro, parsley and onion in a large bowl.
- Add dressing, stir to blend.
- Serve with lime wedges on the side.
