Gourmet Veggie Panini
- Two slices crusty batard or ciabatta bread
- 2 Tbsp. Duke's Light Mayonnaise with Olive Oil
- Grilled slices of eggplant, zucchini, and yellow squash
- Thin slices of red onion
- Thin slices of mozzarella cheese
- Slices of roasted red pepper
- Several leaves of baby arugula
- Spread Duke’s on each slice of bread.
- Place arugula leaves on bottom slice, layer remaining ingredients and top with second slice of bread.
