Duke's Tomato Pie

Ingredients
- 9 inch pie crust
- 5-6 tomatoes
- 1/2 Vidalia onion, thinly sliced
- 1/3 cup Duke's Mayonnaise
- 1/3 cup grated Parmesan cheese
- 1 clove minced garlic
- 1/4 cup chopped, fresh basil
- 2 tsp. oregano
Directions
Preparation
- Slice tomatoes and sprinkle with salt.
- Place tomatoes on paper towels to drain for 10 minutes.
- Bake pie crust at 450 for 8 to 10 minutes or until lightly browned.
- Place onion slices in crust and then tomato slices on top. Sprinkle with pepper.
- Combine Duke’s, Parmesan and garlic and spread over tomatoes.
- Bake at 350°F for 35-45 minutes.
- Garnish with basil and oregano.
