BLT Chicken Salad

Ingredients
4 cups cooked chicken (I use rotisserie).
6 bacon slices, crumbled
1/3 cup Greek yogurt

1/4 cup Duke’s mayonnaise
1 tbsp Dijon mustard
1/3 cup diced cherry tomatoes
1/4 cup diced green onion
1 tsp garlic powder
1/2 tsp dried parsley
Salt, to taste
Pepper, to taste
Directions
Add the cooked chicken to a stand mixer.
Add the diced tomatoes, green onions, and crumbled bacon. add 1/3 cup Greek yogurt, 1/4 cup Duke’s Mayonnaise, and 1 tsp Dijon. Season with 1 tsp garlic powder, 1/2 tsp parsley, salt, and pepper.
Mix well until the chicken is shredded and the mixture is well combined.
Serve cool & enjoy! Note: I like to enjoy mine as a sandwich on toasted sourdough with lettuce and mayo!
