Baked Potato Casserole
Starters & Snacks
- 8 to 10 cooked potatoes, cut into chunks
- 1 to 11/2 cups Duke's Mayonnaise
- 2 cups shredded cheddar cheese
- 4-6 scallions, chopped
- Salt and pepper to taste
- Cooked bacon or sautéed mushrooms, if desired
- Mix all ingredients together and place into 9×13″ pan.
- Bake at 325°F for 45 minutes to 1 hour.
